Here are some of my recipes for the food I serve at Oktoberfest...



 
 

Hearty Biker Beans
2 [16 oz] cans Baked Beans
2 [16 oz] cans Kidney Beans
32 oz frozen Lima Beans
1 lb. Hamburger, fried, drained, & crumbled
1 lb. Bacon, fried, drained, & crumbled
1 Lg Onion, chopped
1 cup Brown Sugar
2 tsp Salt
3 tsp Mustard
1 cup Ketchup
1 Tbsp Vinegar
Mix together an simmer for a few hours...

 
Sue's Hot German Potato Salad
Boil 20 pounds Red Potatoes.  Do not peel. 
Drain and set aside to cool.  (Note: 60 potatoes = 20 lbs)

5# bacon, fried, drained, & crumbled. Set aside. (Reserve fat)
---
 2 ½ cups bacon fat
5 Large Onions, chopped
1 whole bunch Celery, chopped
In a large kettle, cook onion until tender, then:
---
Blend in:   2 ½ cups flour
     2 ½ cups Sugar
     ½ cup Salt
     1/3 cup Celery Seed
     5 cup Vinegar
     Fresh Parsley, chopped

Dice potatoes.  Pour over the dressing and toss lightly.  Bake until hot.

German Chocolate Cake with Coconut/Pecan Frosting
Mix together & set aside: 
   2 cups Sugar
   ½ tsp Salt
   ½ cup Margarine
   2 Eggs

In a separate cup mix together & set aside: 
   2 tsp Soda
   1 Tbsp Vinegar
---
Add to first mixture: 
   1 cup buttermilk
   1 tsp vanilla

Mix well, then add: 
   2 rounded cups Flour
   ½ cup cocoa
Mix one more time & add:  Soda/vinegar mixture
Mix thoroughly.  Add 1 Cup boiling water.
Mix and pour into 9x13” pan.  Batter will be very thin.
Bake at 350o  for 40 – 45 minutes

FROSTING:
In a saucepan, mix together: 
   1 cup evaporated milk or cream
   ½ cup butter or margarine
   1 cup sugar
   3 egg yolks
   1 tsp vanilla
Cook and stir over medium heat until it is thick. (about 12 minutes)
Add: 
   1 1/3 cups shredded Coconut
   1 cup chopped Pecans
Beat the mixture until it is thick enough to spread.  Makes 2 ½ cups.

Oktoberfest Coleslaw
Two 1-lb. bags shredded cabbage 
One bag shredded red cabbage
One container  Coleslaw from Sam's Club
2 Apples, cored & diced
Handful of "Craisins" (Dried Cranberries)

Mix together and refrigerate a day.
 

Sweet Sour Red Cabbage

Two Heads Red cabbage, chopped
1/2 - 1 cup Red Wine Vinegar or Apple Cider Vinegar
1/2 - 1 cup sugar
2 Apples, cored & chopped 
1 cup water
Salt & pepper

Mix all ingredients into a pot and simmer slowly 3 - 4 hours.  Balance sugar & vinegar to taste.  Serve hot.
